May is National Celiac Awareness Month designed to raise awareness of this autoimmune disorder that affects about 1 in 133 people, making it one of the most common yet mis-or undiagnosed health conditions in the world.
When Aleia’s started, 11 years ago, 97% of the 3 million Americans living with celiac disease remained undiagnosed or misdiagnosed. Today, 83% are waiting for their diagnosis – a 17% drop in the undiagnosed rate.
Researchers are getting closer to understanding how celiac disease develops and various treatment options are being explored. A 100% gluten-free diet is the only existing treatment for celiac disease today. Even though it is overwhelming at first, know that the diet will get easier to manage over time.
Spreading the word ultimately makes others aware of the disease itself and we’ve created a way for you to get involved!
Throughout the month of May, we will be sharing gluten-free recipes that use our flavor-full products that have brought happiness to those living gluten-free and suffering from Celiac. Oftentimes, those with dietary restrictions must give up foods they enjoy. By sharing gluten-free versions of some favorite dishes, we hope to #takebackceliac and essentially “take back” those mouth-watering foods that so many have had to refrain from. Join our efforts by using #takebackceliac on your Instagram & Facebook to share tips that have helped you on your Celiac journey.
Here at Aleia’s, we celebrate gluten-free foods all year round but want to make our celebration a little extra special for the month of May. We hope you will celebrate with us!

Mom’s Potato Latkes
(A.k.a. Gram)
(Makes approximately 25)
8 Russet Potatoes
3 eggs (whipped)
1/4 cup GF flour
1 Tsp salt
1 Tsp non- aluminum baking powder
Pepper to taste
Vegetable oil or Peanut oil
Juice of half a lemon
Cotton towel
Cookie rack
Sheet tray
Paper towel
1) Peel potatoes and place in a bowl or pot of cold lemon water.
2) Quarter potatoes and grate using a food processor (using the grating blade) or grate by hand. Place in bowl (until time to ring out liquid)
3) In batches place shredded potatoes in clean cotton towel; twist and squeeze to wring out any liquid. Place in bowl.
4) Wisk 3 eggs and add to bowl along with 1 tsp salt, 1 tsp baking powder, ¼ cup flour, pepper to taste and stir until combined.
5) Pour vegetable oil in fry pan to cover bottom (about ¼ inch) Heat vegetable oil to medium.
6) Using a small serving spoon scoop potato mixture (flatten a little with your hand) and drop in hot oil. Fry until golden brown on both sides.
7) Place paper towel on sheet tray and top with cookie rack
8) Drain potato latkes and serve!
TIP’S
- Before frying, coat latkes with panko for a crispier result.
- Latkes can be frozen on an aluminum tray with tinfoil placed between layers. Reheat from frozen or room temperature in a 250 degree oven until heated through.
- For vegetable latkes, add shredded carrots, chopped onions, or chopped peppers to shredded mixture.
