Happy Hanukkah! ๐โจ May light and love fill your home! Let the light shine bright as we honor the miracle of this joyous holiday. Don`t skip the fried treats! Wishing you a Hanukkah filled with warmth, happiness, and lots of light. ๐
Momโs Potato Latkes
(A.k.a. Gram)
(Makes approximately 25)
8 Russet Potatoes
3 eggs (whipped)
1/4 cup GF flour
1 Tsp salt
1 Tsp non- aluminum baking powder
Pepper to taste
Vegetable oil or Peanut oil
Juice of half a lemon
Cotton towel
Cookie rack
Sheet tray
Paper towel
1) Peel potatoes and place in a bowl or pot of cold lemon water.
2) Quarter potatoes and grate using a food processor (using the grating blade) or grate by hand. Place in bowl (until time to ring out liquid)
3) In batches place shredded potatoes in clean cotton towel; twist and squeeze to wring out any liquid. Place in bowl.
4) Wisk 3 eggs and add to bowl along with 1 tsp salt, 1 tsp baking powder, ยผ cup flour, pepper to taste and stir until combined.
5) Pour vegetable oil in fry pan to cover bottom (about ยผ inch) Heat vegetable oil to medium.
6) Using a small serving spoon scoop potato mixture (flatten a little with your hand) and drop in hot oil. Fry until golden brown on both sides.
7) Place paper towel on sheet tray and top with cookie rack
8) Drain potato latkes and serve!
TIPโS
- Before frying, coat latkes with panko for a crispier result.
- Latkes can be frozen on an aluminum tray with tinfoil placed between layers. Reheat from frozen or room temperature in a 250 degree oven until heated through.
- For vegetable latkes, add shredded carrots, chopped onions, or chopped peppers to shredded mixture.
